Cajun spiced chicken served with a chorizo and mixed bean cassoulet

This recipe is similar to the Philidelphia stuffed chicken wrapped in parma ham and chicken wrapped in bacon and served with mashed potato, spinach and pesto ones I’ve posted before, what can I say, I love chicken and haven’t had bacon for a while (we often have one or two chicken based meals a week).

You will need
1 skinless chicken breast (per person)
25g of Chorizo, chopped
400g tin of Mixed beans
Cajun spices
Ground garlic
Olive oil

Method

Marinade

Rub the cajun spice mix onto the chicken breasts with a little oil. Leave to marinate in the fridge overnight in a sealed container (we use old take away containers).

Cooking the chicken

Pre-heat the oven to 200C.

Remove the chicken from the fridge and place on a baking tray or in a baking dish.

Roast the chicken in the oven for approximately 30 minutes until cooked through.

For the cassoulet

Heat the oil in a large frying pan, add the chorizo and ground garlic and fry for 2 mins until the chorizo is starting to crisp. Tip in the beans, then leave to simmer for 5 mins.
