I’ve recently been doing some Christmas baking at my friend Ali’s house. 🙂 We both made a sponge cake (mine was chcolate) and decorated them with a snow theme. Mine was a penguin cake – I made the penguins, pond and fish myself with white fondant and food colouring.
This is my first time making characters out of fondant and think they turned out very well, unfortunately, I forgot to take a photo before the icing sugar and fondant figures melted!! 🙁 It was hot in her house.
You will need:
170g unsalted butter
170g caster sugar
115g self-raising flour
55g cocoa powder
Confectioners sugar to decorate
White rolling icing
Yellow food colouring
Black food colouring
Blue food colouring
Red food colouring
Preheat the oven to 190c/170c fan or gas mark 5.
Put the butter and sugar into a bowl and mix until creamy and lighter in colour.
Sieve the cocoa and flour into a bowl and add the eggs one at a time, mixing well after each addition.
Spoon the mixture into the tin and spread using a knife.
Put into the oven and bake for 25 minutes until springy to touch.
Remove from the oven and leave to stand for 5 minutes before turning out on to a cooling rack.
Sprinkle all over with confectioners sugar to give a snow effect and add fondant figures fixed with water.
