Christmas cupcakes

Merry Christmas and a Happy New Year! 🙂 For Christmas this year I’ve decided to bake Christmas cupcakes and a chocolate chip banana cake as we had some left over bananas to use up. For the Christmas cupcakes I used my “go to cupcake recipe” but added a chocolate sauce to the mixture to make gooey chocolate filled cupcakes. I decorated with red / pink icing and Christmas themed sprinkles / iced decorations. Banana cake with chocolate chips

Excuse the picture, it was taken after we’d already cut the cake! This is my second go at baking a cake, my friend suggested bananas and choc chips so that’s what I did. You will need 2 ripe bananas (over ripe is best) 170g caster sugar 170g self raising flour 170g margarine 3 eggs Few drops of vanilla essence 150g chocolate chips Method Preheat the oven to 160°C Squash the bananas until they are smooth Add the other ingredients, one by one and stir well after each addition.
