Cajun spiced chicken served with a chorizo and mixed bean cassoulet

This recipe is similar to the Philidelphia stuffed chicken wrapped in parma ham and chicken wrapped in bacon and served with mashed potato, spinach and pesto ones I’ve posted before, what can I say, I love chicken and haven’t had bacon for a while (we often have one or two chicken based meals a week). Chicken with pesto mash potato

Chicken and bacon pasta bake

We haven’t been eating a lot of pasta lately, which is sad as it’s one of my favourite things to cook and eat. Ryan has been eating healthier lately and pasta, even wholewheat pasta which we buy, is too high in carbohydrates for his current healthy eating regime. Chicken wrapped in bacon and served with mash potato, spinach and pesto

This morning we went to a local carboot sale and indoor market where I got a great deal on a dvd box set and we bought a side board / cabinet for our bedroom. We’re going bowling and for food with some friends this evening so wanted a quick and easy meal for lunch. Valentine’s Day 2016

If you’ve been following my blog for a while you’ll know I don’t really celebrate Valentine’s Day, I’ll give presents and maybe do some heart shaped themed baking (I love baking) but haven’t celebrated much more than that. Chicken pesto pasta

Tonight I made chicken and pesto pasta for dinner. Funnily my first time using chicken with pasta! I don’t know why I haven’t cooked this before, it’s great as a quick and easy meal for two or make extra for lunch at work. Yummy!
