Chicken pesto pasta

Tonight I made chicken and pesto pasta for dinner. Funnily my first time using chicken with pasta! I don’t know why I haven’t cooked this before, it’s great as a quick and easy meal for two or make extra for lunch at work. Yummy! Spicy tomato, mince and sausage enchiladas

Using some left over meat and pasta sauce Ryan and I made these spicy tomato, mince and sausage enchiladas. We threw a rasher of smoked bacon in as well. They were lovely! Not too filling and full of flavour. No yeast pizza

A no yeast pizza recipe –  usually I keep yeast in my baking cupboard, but occasionally I forget to stock up! This was one of those occasions, so I improvised with self raising flour. It tasted really good and I don’t think it came out too badly for a first try. Cheesy Baked Enchiladas

I love making these cheesy baked enchiladas and Mexican style food in general (Ryan makes the best bean burritos!). This quick and easy recipe will serve 4, but you can also have some as left overs.
