Healthy lunch: Tuna and mixed bean pasta salad

I’ve been trying to ‘spice up’ my lunches at work after getting bored of sandwiches and getting into a bad habit of choosing unhealthy snacks from Tesco meal deals!

At Weight Watchers these past couple of weeks we’ve been talking about proteins, good carbohydrates and good fats. I made this pasta dish for lunch last week and really enjoyed it, so much in fact that I made it again this week!

You will need

  • One tin of tuna in spring water, drained
  • One tin of mixed beans, drained and rinsed
  • Wholewheat pasta
  • Fresh basil
  • Lemon juice

Method

Cook 75g of wholewheat pasta per person according to pack instructions, drain in a colander then tip into a large bowl.

Flake one tin of tuna in spring water (drained) over the pasta with the can of mixed beans (drained and rinsed) and mix well.

Finish with fresh basil and a squeeze of lemon juice.

Season to taste and add a little more lemon juice if needed.

Enjoy!

Variations: Instead of lemon juice you could try a tbsp of light mayonnaise or green pesto. Or if you’re not a fan of tuna try tinned salmon or some diced chicken breast.

    Thanks, I love the idea of it being healthy. I was just looking for healthy lunches when I came across that piece of art or in order words the food. I really want to try to make that meal but thinking about it makes me want to do it now. Thanks a lot Kim, it will help me to complete my homework.

    Lovely post Kim, this healthy lunch looks really yummy! I love tuna on lots of things, one of my favourite dishes is tuna pasta bake. The different variations you have given at the bottom sound good too. We have a salad for most lunches with things like lettuce, tomatoes, cucumber, egg, wholemeal bread etc. For dessert we tend to stick to the same things most days too which is natural yogurt, fresh fruit, seeds and nuts. Would love to see more posts like this, as it’s fun to share ideas! 🙂 xx

    Mmmm. You’re making me hungry. It looks delicious. I’m trying to cook lunch more often, but I struggle with the time it takes. I’m bad with time management even when making lunch, heh.

    I would make it but my husband hates beans with a passion but it looks good to me!

      You could try substituting the beans for something else, sweetcorn or peas would go well with it.

    I love pasta! Slimming World is great for pasta-lovers because you can eat as much of it as you want. Is it similar on Weight Watchers? I love making different pasta dishes – pesto is my favourite dressing at the moment!
