Cheesy Baked Enchiladas

I love Mexican style food. Ever since my first trip to Chiquitos restaurant in Swindon and one of my favourites are cheesy baked enchiladas, served with some Uncle Ben’s tomato and basil rice.   This quick and easy recipe will serve 4, but why not take the left overs to work with you?
