Strawberry drizzle cake

Mother’s Day was last month (in the UK, I know it’s not until May in some countries) and I surprised mine with a Strawberry drizzle cake, we also took her out for the day. I used a butterfly fondant cutter and small cookie cutters for the letters (the daisies were store bought). For the cake For the cake: 175g unsalted butter, softened 175g golden caster sugar 2 tsp strawberry flavouring and additional for icing 2 medium eggs, beaten 175g self raising […]

Minnie Mouse giant cupcake

My first (and probably last) giant cupcake – a Minnie Mouse giant cupcake I made for my sister’s birthday this year. It took two attempts at baking, the first cake did not rise correctly and got stuck in the silicone mould, the second didn’t rise into the “tip” of the mould. I always seem to have issues baking with silicone moulds. INGREDIENTS 2½ cups of self raising flour 1½ cups caster sugar 250g unsalted butter (softened) 6 eggs 2 tsp Vanilla flavouring Approx 200g jam for the filling and to stick on the white chocolate fingers For decorating Pink frosting […]

Motorbike cake

One of my goals this year was to bake more often and I’ve been trying my hand at novelty cakes recently. My first attempt was a snooker table cake for my friends birthday, followed by a penguin design for Christmas last year. Both were simple sponge cake recipes with fondant decorations. The motorbike cake (shown below) was made for Artur’s birthday back in May and is my latest novelty cake. Although I cheated a little and bought the edible motorbike decoration after a few failed attempts at assembling my own! But I’m hoping to work on my fondant decorations for […]

Mint Choc Chip Cake Recipe

I’ve been playing a mobile game called Baking Story recently, and the most recent level introduced some mint choc chip cupcakes! My favourite ice cream flavour… In cupcake form!? I knew I had to give them a try in real life for myself. Which you can see a snippet off in the left-hand corner, but as I had some cake mix leftover, I decided to make a mint choc chip cake as well. And I love how it turned out. I used my heart-shaped cake pan from Lakeland and layered the cake with the mint flavoured frosting. It was delicious! […]
