Spicy pepperoni and mince meat pasta

We had some left over tomato pasta sauce to use up and haven’t had pasta in months! One of Ryan’s favourite pasta dishes is a traditional spaghetti bolognaise, I decided to put a spin on it and added some chilli and pepperoni for a bit of a spice.

It was really good but not as spicy as I expecting, I’ll definitely add more chilli powder next time we make this. It’s a great, quick and easy meal for lunch or a light dinner.

Serves: 2

You will need

150g dry pasta – I used whole wheat fusili

350g Jar of tomato pasta sauce or make your own

Oil for frying

1 pinch seasoning (salt, pepper, pasta/pizza herbs)

2- 3 tsp Chilli powder – depending on how much you like spicy food

Pepperoni, chopped into chunks or pepperoni slices cut in half

445g lean mince meat

Method

Preheat the over to 180ºC

Cook the pasta according to packet directions, usually 10 minutes in a saucepan of boiling water. Drain well and set aside.

Combine the tomato pasta sauce with the seasoning and chilli powder and stir well.

Add the pepperoni and pasta and and mix thoroughly.

Serve with garlic bread and enjoy!
