Chicken and bacon pasta bake

We haven’t been eating a lot of pasta lately, which is sad as it’s one of my favourite things to cook and eat.

Ryan has been eating healthier lately and pasta, even wholewheat pasta which we buy, is too high in carbohydrates for his current healthy eating regime.

In spite of this he decided to treat himself and I decided to try a different pasta bake to my usual mince meat or lasagne or sausage or tuna etc and made one with chicken and bacon.

You will need
200g pasta
Jar of tomato and basil sauce or make your own
200g chicken, chopped
3-4 rashers of bacon – chopped thinly
Oil for frying
1 pinch seasoning (salt, pepper, pasta/pizza herbs)
70g cheese, grated

Method

Cook the pasta according to packet directions, usually 10 minutes in a saucepan of boiling water. Drain well and set aside.

Cook the chopped bacon in a frying pan till crisp, drain the excess fat and remove from the pan. In the same pan, cook the chicken.

Once the chicken is cooked through drain the excess fat and add the pasta sauce to the chicken and bacon. Mix well.

Add the pasta and seasoning and mix thoroughly.

Pour the mixture into a small oven proof dish.

Sprinkle with cheese to taste.

Put in the oven for approx 5 mins, until cheese has nicely melted and the edges are a bit crispy.
