Pasta with tuna and tomato sauce
Can’t believe it’s September already! Autumn is more or less here, Halloween is soon (ish) but sadly no Hallowhedon as this year’s event was cancelled. 🙁 I’ve also been seeing “C-word” cards and gift wrap appearing in the shops – too soon if you ask me.
Quite a lot has happened over the past few months, the biggest being that Ryan got a new job. 🙂 Head chef position at a local pub… and I helped out in the kitchen a bit. I’m very proud of him but it’s meant a bunch of late nights and not much time off; we have decided to go away early January though.
As he’s been home late a lot, I’ve been cooking again. 😉 This is one of the latest dishes I’ve tried out; simple? Yes, but really tasty (and spicy!).
You will need
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, finely chopped
- 400g can chopped tomatoes
- ½ tsp chilli powder
- 1 tsp sugar
- 300g pasta (I used Fusilli)
- 100g can tuna, drained
- Grated cheese to serve (optional)
Method
Heat the oil in a pan, throw in the onion and cook for a couple of minutes.
Stir in the garlic, tomatoes, chilli and sugar. Season with salt and pepper and bring to the boil.
Stir throughly, then reduce the heat and simmer for 5 minutes.
Meanwhile, bring a large pan of salted water to the boil. Add the pasta and cook according to packet instructions.
Flake the tuna into the sauce and heat through.
Drain the pasta, return to the pan and stir in the sauce.
Serve with a grinding of pepper and grated cheese (optional).

Simply bake in the oven until the cheese starts bubbling.
