Healthy lunch: Tuna and mixed bean pasta salad
I’ve been trying to ‘spice up’ my lunches at work after getting bored of sandwiches and getting into a bad habit of choosing unhealthy snacks from Tesco meal deals!
At Weight Watchers these past couple of weeks we’ve been talking about proteins, good carbohydrates and good fats. I made this pasta dish for lunch last week and really enjoyed it, so much in fact that I made it again this week!
You will need
- One tin of tuna in spring water, drained
- One tin of mixed beans, drained and rinsed
- Wholewheat pasta
- Fresh basil
- Lemon juice
Cook 75g of wholewheat pasta person according to pack instructions, drain in a colander then tip into a large bowl.
Flake two tins of tuna in spring water (drained) over the pasta with the can of mixed beans (drained and rinsed) and mix well.
Finish with fresh basil and a squeeze of lemon juice.
Season to taste and add a little more lemon juice if needed.
Variations: Instead of lemon juice you could try a tbsp of light mayonnaise or green pesto. Or if you’re not a fan of tuna try tinned salmon or some diced chicken breast.
