Olaf in Summer cake

I made this Olaf in Summer cake for my sister’s birthday this year, it was a chocolate orange sponge cake with chocolate fingers and blue frosting.

You will need
100g unsalted butter, softened
50g cocoa powder
90ml boiling water
3 eggs
175g self-raising flour
300g golden caster sugar
Orange flavouring

For the icing and filling
Blue frosting
White fondant
Black fondant
Orange fondant
Edible pens
Cocktail stick (to assemble Olaf)

Method

Preheat the oven to 180ºC/fan160°C/gas 4

Add the cocoa powder and boiling water into a large bowl and mix well.

Add the remaining ingredients and beat again until combined.

Add the mixture to the prepared tin and bake in the preheated oven for about 20-25 minutes until an inserted skewer comes out clean.

Leave to stand for 5 minutes then turn out on to a cooling rack.

Cover the cake with the blue frosting

Note: Although I did not do it for this cake, I’d recommend a crumb coating first. I’ll be doing so in future.

Add the chcolate fingers around the cake and leave in the fridge to set.

Roll one large ball and two smaller balls out of the white fondant, this will make up Olaf’s head and body. Assemble together with the cocktail stick.

Roll to tiny balls for his eyes and stick out with water or edible glue – mine is a vegetarian friendly edible glue from Lakeland. Add to dots for pupils (I used an edible pen).

Roll out a sausage shape from the orange frosting to form his carrot nose. Attach with water or edible glue.

Roll out two small balls and stick to Olaf’s body and 3 small thin sausages for this arms and hair – see photo. Attach with water or edible glue.

Draw on this mouth with the edible pen.

Attach the completed Olaf to the cake with the cocktail stick and put in the fridge to set.
