Springtime Walk in The Cotswolds: Easter 2016

Happy Easter! 🙂 Or Happy Monday to those that don’t celebrate it. Today, my family and I have been celebrating with a lovely roast chicken dinner with all the trimmings (thanks Mum!). Followed by dessert, exchanging Easter eggs, and a lovely Springtime walk in the Cotswolds.

One of the things I love about a Springtime walk – not only in The Cotswolds – is how vibrant everything starts to look. The sun is shining but it’s still a little chilly!  Just the way I like it. 😉 The birds are chirping, the bees are buzzing, and the flowers are starting to bloom, too. It’s definitely one of my favourite times of year for a walk or hike.

Unfortunately for us, it had rained a few days earlier. So, it was muddy. Too muddy in places! Even with our walking boots on. So, we had to take a couple of detours from our planned route. Still we made the best of it and had a lovely stroll by the canal path.

We even got to watch one of the Great Western Railway trains go by.

After our walk we tucked into a delightful lemon drizzle cake which I’d baked for dessert. I used the honeycomb shaped cake pan that I bought from Lakeland years ago.

It’s a really good quality pan, non-stick and the cakes usually turn out perfectly. I say usually as the cake actually got stuck this time! But what I like most about this pan is the bite size pieces it makes and the little bees in the design. Unfortunately, it’s now a discontinued product for Lakeland. 😞 But they do pop up on Ebay from time to time so it’s worth a look.

There are two probable causes for the cake sticking to the pan – either not greasing well enough or leaving the cake in the pan too long while cooling! 🤦‍♀️

    Happy late easter to you as well, the flowers are beautiful and the cake looks really good as well. I’d love to make it but my kitchen is not big enough for baking, it’s barely big enough for cooking.

      My kitchen can fit three people in it if we stand in a line! It’s quite small, one wall has the fridge freezer, cooker, microwave and one side board with two over head cupboards and the other side is 4 over head cupboards, the sink, two side boards and the washing machine.

    Happy Easter! Those are beautiful flowers 🙂 Yum, that lemon drizzle cake sounds really good. I love lemony desserts. I like the idea of that honeycomb pan too, though too bad it’s been discontinued. It’s cute, and that’s nice that it makes bite sized pieces! Your cake looks good!
